Chocolate topped Macaroons
Ingredients
1 package (8 oz.) packaged shredded unsweetened coconut
3 large egg whites
1/4 cup of erythritol (Stevia) or other sweetener
2 teaspoons vanilla extract
4 oz. semisweet chocolate
Preheat oven to 350 degrees F. Line a baking sheet with wax paper.
In a large bowl whisk together egg whites with sugar. Add vanilla and coconut stir till will combined.
Mold the batter into small golf sized
balls.
Place on the baking sheet and bake until the tops become golden brown approximately... 15 mins.
Take them out to cool.
While they are baking melt the chocolate over low heat in a double boiler or you can even microwave it.
Dip the macaroons in the chocolate or drizzle on top.
Place in the refrigerator until chocolate is set and serve!
Chocolate/Vanilla Pudding Parfait
Ingredients:
1 package sugar free or low fat chocolate/vanilla
pudding mix(prepare per directions on package)
Directions:
Using 4 parfait glasses layer the following ingredients:
1 tbs. low fat grahm cracker crumbs
2 tbs. chocolate pudding
1 tbs. of cut up strawberries/ blueberries
Top with low fat cool whip (optional)
Serve and enjoy!
Chocolate Drizzled Strawberries
Ingredients:
1 package of fresh strawberries
1 cup of dark chocolate chunks or chips
Directions:
Melt chocolate over low flame / or 1 minute in microwave
Stir chocolate and drizzle over washed strawberries
Serve and Enjoy!
Protein Sorbet
In a blender place the following:
1 cup chopped frozen bananas
1 cup chopped frozen mango
1 cup chopped frozen strawberry
30-40g whey protein (I like vanilla)
2 TB pudding powder (I used sugar-free Jello
Pudding powder in vanilla)–this is what gives it the smooth texture
1 cup unsweetened vanilla almond milk
Blend on HIGH until it become a thick, sorbet-ish texture. It should be thick like ice cream, not thin like a protein smoothie. You are going to have to work it a bit! Enjoy!

Chocolate Bark Ingredients: 2 cups of dark chocolate 1/2 cup of toasted almond slices 1/2 cup dried craisins Directions: Melt the dark chocolate on the stove over a pot of water using a double boiler or melting it in the microwave. Mix the almonds and craisins into the chocolate mixture. Pour
the mixture in a shallow pan and place in the refrigerator to set.
After chocolate has set cut up into small squares and enjoy!
